Place the potatoes in an oven-safe dish. Then season. Drizzle with oil and add some salt, herbs, and/or spices. Garlic, parsley, and thyme are traditional options.
Make sure the potatoes are completely coated in seasoning. Then place them in the microwave. Cook on HIGH for around 10 minutes. Then, take them out and test the softness.
You can serve them like this or you can finish them off in the oven. This process will soften the potatoes but won’t crisp up the outside in the same way that the oven will. The choice is yours!
