  • 6.5 oz Apple juice
  • 1 kg granulated sugar
  • 1 1/2 kg apricot
  • 1 large lemon
  • 1/2 tablespoon of butter


Step 1

  • Your first step is to preheat the oven to 130 degrees Fahrenheit. You'll want to sterilize all the jars you are using to ensure your jam will stay fresh and safe. While the oven is preheating you can wash the jars using hot water and soap. Once the jars are cleaned, place the jars in a baking tray with the lids off but still included and throw everything in the oven for 20 minutes.

Step 2

  • While the jars are in the oven, you can start making the jam. Place 2 small plates that are heatproof in the freezer while you are making the jam.
  • Clean your apricots by washing them and then pat them until they are completely dry. Cut each one in half and remove the stone, or pit, from each one.
  • After removing all the stones, take a wide saucepan and combine the lemon juice and apple juice and toss your apricots in the mixture.
  • Turn your stovetop on to medium heat and place your saucepan on top. You want to stir the mixture occasionally to make sure it doesn't stagnate. Use a wooden spoon so the handle doesn't get too hot while mixing.
  • You'll want to continue stirring the mixture for another 10-15 minutes but cover the pot while doing so. The apricots will end up being tender and should be thoroughly cooked through. If you prefer your jam smooth without any chunks then you'll need to blend everything together. Remove the saucepan from the stovetop while you are blending the jam.
  • Add you sugar to the jam mixture and stir consistently until the sugar has completely dissolved into the jam. Make sure not to have your water boil during this process.
  • Once all of your sugar has dissolved, turn up the heat on your stovetop and boil the jam until all the liquid has evaporated. Continue cooking while stirring the saucepan occasionally to keep the bottom from burning. You will need to stir the jam more frequently as it reduces.
  • Once it has boiled for 20 minutes turn off your heat and put a quarter sized jam on your cold plate. Once cooled, stick a finger slightly in the jam. If it wrinkles, it is ready. But, if it is liquid, keep cooking for another 5 minutes. If you are using a sugar thermometer, the temperature should read 220 degrees Fahrenheit.
  • Remove all scum from the surface and add your butter. Stir until your butter dissolves.
  • Let your jam rest for 10 minutes to allow the fruit to sink throughout the jam. Otherwise, the fruit will remain at the top.
  • Stir the jam and then ladle it into your jars. Be extremely careful as the jam will be extremely hot. Seal the jars with a tight lid when finished.
  • Once the jam cools, remove any spills and label them with the date you made them. Store them in any place that is cool and dark like a garage or pantry.


The apricot jam is made with a low amount of sugar which means it won't stay long if it isn't kept in the fridge. Your options are to either keep it in the fridge or bottle it to prevent further oxidation.
To store your jam properly without using a fridge, take a deep pan and line it with a tea towel and place your jars on top. Next, weave another towel in between each line of jars to avoid them knocking into themselves. Pour enough lukewarm water over all the jars to cover them fully and bring everything to a boil. Simmer for an hour and let cool till the water comes to room temperature.
You should be able to keep your jars in a cool, dark place for up to a year before they start to spoil.
Only use fruit that is just ripe or slightly unripe. No bruises or overly ripe fruit will work.
Do not lower the sugar amount you add to the jam. It is meant as a preservative for your mixture.
