  • 2 Oz about six slices Prosciutto (thinly sliced)
  • ¼ cup and 2 Tbsp olive oil
  • Two medium shallots finely chopped
  • 1 cup low-sodium chicken broth or chicken stock
  • 1 Tsp thyme leaves and more for serving
  • 1 lb mixed mushrooms maitake, chanterelles, cremini, oyster, or shitake recommended torn into small pieces
  • 12 oz fettuccine or pappardelle pasta
  • 2 Tbsp unsalted butter
  • cup heavy cream
  • Freshly ground pepper and kosher salt to taste


  • Heat 1/4 cup olive oil in a heavy pot or large Dutch oven over medium heat. Place the prosciutto in a single layer inside the pool, and turn it over 1-2 times for about 5 minutes until the meat is crisp. Transfer prosciutto to paper towels to drain the oil.
  • Heat your remaining 2 Tbsp olive oil inside the pot over high heat. Add in the mushrooms and occasionally toss for 5-8 minutes until they are tender and browned. Reduce to medium-low heat. Add the shallots, a single tsp of thyme, and your desired salt and pepper. Stir often for 2 minutes until your shallots are softened and translucent. Add your stock and reduce to low heat. Bring the ingredients to a simmer and continue cooking for 5-7 minutes until only a thin layer of stock remains at the bottom.
  • In the meantime, cook your pasta in a large pot filled with boiling salted water for about 3 minutes or the recommended time on the package.
  • With tongs, move the pasta to the sesame pot with the mushrooms, then add about 1 cup of cooking liquid from the pasta pot. Crumble and add nearly half of the Prosciutto into the pool. Stir occasionally for 2 minutes or until your pasta is very al dente and the water slightly thickens. Include cream, then return to a simmer. Continue cooking and tossing for about a minute until your pasta has a nice coat. Remove the pot from the heat, then add the butter and toss. Add a bit of salt for seasoning if needed.
  • Serve by dividing the pasta between serving bowls. Top the pasta with crumbles of remaining prosciutto and thyme, seasoning with freshly ground pepper.
