Hearts of Palm Pasta with Creamy Spinach Sauce + More
Ingredients
- 1 Tbsp olive oil
- 24 Oz hearts of palm pasta rinsed and drained
- 16 Oz fresh baby spinach chopped
- 3-4 garlic cloves minced
- 1 cup milk
- 8 Oz cream cheese sliced into cubes
- ½ cup parmesan cheese grated
- ¼ – ½ Tsp crushed red pepper
- 1 Tsp dried Italian seasoning
- ⅛ Tsp Ground nutmeg
- Pepper and salt to taste
Instructions
- Rinse the heart of palm noodles inside a colander. Shake the colander to dry the seats of palm pasta while you start on your spinach pasta sauce.
- Using a large sauté pan, place the skillet over medium heat. Add in the garlic and olive oil, sautéing your garlic for about 1-2 minutes, and roughly chop your spinach.
- Add spinach to the pan and stir. Add just a few handfuls at a time, allowing the spinach to begin wilting. After all the spinach is in your pan, add the milk, cream cheese, Parmesan cheese, crushed red pepper, ground nutmeg, and dried Italian seasoning.
- Allow the sauce to simmer for about 5 minutes while stirring until the sauce begins to thicken into the consistency of "heavy cream."
- Now stir in the hearts of palm pasta and allow everything to simmer for about 1-2 minutes or until the noodles are warmed up. Serve with a few more sprinkles of Parmesan cheese.
