Ingredients
  

  • 2 chicken breasts bone-in
  • 1 tablespoon olive oil
  • 1 tablespoon garlic
  • 3/4 teaspoon oregano
  • 3/4 teaspoon rosemary
  • 1 lemon
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 350 degrees F. Line a baking pan with parchment paper.
  • With the skin side up place the chicken in the baking pan. Do not let the chicken touch but make sure to pat each one dry with a paper towel.
  • Using a small bowl, add the oil, garlic, rosemary, and oregano. Zest your lemon in the bowl and stir all ingredients until thoroughly mixed.
  • Using a cooking brush, coat your chicken breasts so that all surfaces are covered in the mixture.
  • Cut your lemon in half and squeeze one half on the top of every chicken. Cut the remaining half into wedges and place them under the chicken breasts.
  • Put a dash of salt and pepper on each chicken breast.
  • Depending on how large your chicken breasts are, cook them anywhere from 35-45 minutes. If you have very large chicken breasts that weigh more than a pound you may end up needing to cook your breast anywhere from 50-60 minutes. Use a thermometer to make sure the chicken reaches an internal temp of 165 degrees. You should always measure the thickest part of the chicken and never let your thermometer touch the bone.
  • The secret trick to getting a very crispy and golden brown chicken breast is to place it under the broiler for an additional 2 minutes after it is done cooking. Don’t leave it in for too long or else it will become overcooked and hard to eat.
  • Once you remove the chicken from the oven transfer it to a cutting board and then cover it. Let the chicken breast sit for 5-10 minutes so the juices can absorb into the meat and you won’t lose any while cutting the chicken.
  • Sprinkle at salt or additional herbs before serving while still warm.

Notes
