You do need your pancakes to be free of lumps, but if you spend too much time overmixing the batter, you will be left with no air bubbles in your pancakes, which means they will be flat, and may deflate when cooking.

Therefore, you will need some air bubbles in your pancakes if you want that scrummy fluffy texture!

Also, you will want a hot pan to start with, as the high temperature will jump start your pancakes, and get all of those ingredients working together to react with the batter.

However, do not let your pan get too hot, or you may burn your pancakes, which nobody wants. Just look for that happy medium in between, and you should be good to go.

How To Make Fluffy Pancakes With Pancake Mix Recipe

If you are ready to start making fluffy pancakes like you never have before, then have a look at this guide. The first step is to gather all of your ingredients together (listed on the recipe card at the bottom) and get a large mixing bowl.

With your mixing bowl, you are going to need to beat the butter, egg and buttermilk together until they are completely combined. Then, you will need to add your pancake mix into the bowl, and whisk it together until combined, too.

Then, get a separate bowl, and beat together some egg whites with a little lemon juice, until you start to get some peaks forming. Next, take some of the pre whisked egg whites, and gradually fold them into the pancake mixture that you have made.

Once this is done, you can heat your skillet, over a medium high temperature. Once warm, you can drop ¼ of a cup of the pancake mixture into the skillet, and cook for just one minute. After this, lift it up and flip the pancake and cook the other side for another minute. After this, your pancakes should be done, and you can serve them up warm with your favorite syrup or toppings!

  • 2 cups pancake mix
  • 2 tbsp melted butter
